You should be good to use the 45" standard tongue with your two 12ft boats but if you ever needed more clearance for longer boats you can always add the 75" tongue later on.

The deck of the GO EASY Ultimate is 44″ x 43.5″.
The GO EASY Ultimate is not available with a lockable gear box, however, you can use an after market locking cable to secure the lid.
The Yakima racks should be able to clamp on directly to the SylvanSport Durabars included with the GO EASY trailer.
